NV Parxet Cuvee 21 Cava $12.95

Spain, Alella

Made with traditional varieties of Macabeo (Viura), Parellada and Pansa Blanca from the region of Alella. The Cuvee 21 is very pale with green hues, with very fine, persistent bubbles with a tendency to form a foam crown. The nose is full, fruity and intense. The wine has a lovely soft acidity which conserves the primary bouquets of the varieties. The balance in flavor and taste, characteristic of the varieties and the maturing process, explodes in the mouth.

NV Champalou Brut Vouvray $19.95

France, Loire Valley

100% Chenin Blanc. Fermentation takes place in Stainless Steel tanks for about 2 months. Secondary Fermentation occurs in the bottle, as per "Methode Champenoise". All of their vineyards are planted 100% to Chenin Blanc, no irrigation is employed, and the vineyards are managed with "lutte raisonn?e" methods, meaning roughly that unless there is a catastrophic infestation or some other disaster, the wines are grown organically.

Importer Kermit Lynch describes it thusly; "This is Champalou's sparkling thriller and no, you cannot do without it. It has bouquet. I mention that because a lot of sparkling wines only sparkle. Nose ample, generous, ripe, sort of like a ripe apple. Fine bead with a lovely, stimulating freshness. You taste the grape discreetly, with elegance, and then there is a tantalizing quince-like note at the end. Here is Vouvray whose only agenda is to bring us pleasure." K.L And that it does exceedingly well!
